Oven Roasted Tomatoes

Ingredients

2 c. Vine ripened tomatoes, sliced in half
½ c. Minced garlic
½ c. Kosher salt
½ c. Dry oregano
½ c. White sugar
2 c. EVOO

Preparation

  1. Preheat oven to 325°F.
  2. Cut Roma tomatoes in half and place them in a big bowl, add sugar, salt, pepper, garlic, olive oil and mix.
  3. Place them in line on sheet pans with parchment paper (face up—skin down).
  4. Bake in the oven approximately two hours.
  5. When the tomatoes are soft, let it cool down and pull skin off.
