Ingredients

3 lbs. All-purpose (AP) flour
1 lb. Fine Semolina flour
3 c. Whole eggs
½ c. Dry white wine (Pinot Grigio)

Preparation

  1. Whisk together eggs and white wine.
  2. Gradually add eggs to flours in bowl and mix until smooth and elastic.
  3. Let rest one hour before rolling into sheets as thin as possible, cut into 4 " squares. Add lots of semolina and flour between each layer to avoid stick with each other.
